Cusk is a low-fat fish which tastes rather similar to cod, and is fished mostly in the North Atlantic coastal shelf near the American state of Maine and the Canadian Maritimes. It doesn't appear too often for local fish-buyers in the US, but is popular when it is available. Available here now....
